Crockpot Ranch Pork Chops with Mushroom Gravy
Ingredients
Main Components
- 4 boneless pork chops, about 1 inch thick (6 oz / 170 g each)
- Freshly ground black pepper, to taste (hold off on extra salt — the soup and ranch mix are both salty)
- 2 tablespoons (28 g) unsalted butter, divided
- 8 oz (225 g) cremini or white mushrooms, sliced
- 1 small yellow onion, thinly sliced
- 1 envelope (1 oz / 28 g) dry ranch seasoning mix
- 1 can (10.5 oz / 298 g) condensed cream of mushroom soup
- 1 cup (240 ml) low-sodium chicken broth
For the Gravy (optional thickener)
- 1 tablespoon (8 g) cornstarch
- 1 tablespoon (15 ml) cold water
To Finish
- 2 tablespoons chopped fresh parsley or chives
Substitutions:
- Cream of mushroom soup → cream of chicken soup gives a milder, less mushroom-forward gravy; several of the source recipes use this instead.
- Dry ranch packet → 1 tablespoon each dried dill and dried parsley, 1 teaspoon each garlic powder and onion powder, plus ½ teaspoon salt, if you'd rather skip the MSG and anticaking agents in a store packet.
- Chicken broth → beef broth for a deeper, more savory gravy.
- Boneless → bone-in chops work too; add 30–45 minutes of cook time and judge doneness by temperature, not the clock.
Equipment
- 6–8 quart slow cooker
- Large skillet (for the optional sear)
- Instant-read thermometer
- Small bowl, for the cornstarch slurry
Instructions
Preparation (Active time: 10 min)
1
Season the chops: Pat the pork chops dry with paper towels and season both sides with black pepper. Skip added salt here — the soup and ranch mix carry plenty.
2
Sear (optional but recommended): Melt 1 tablespoon of the butter in a skillet over medium-high heat. Sear the chops 2–3 minutes per side, until a golden-brown crust forms. They won't be cooked through yet — that's fine, the crust is what you're after. This step takes 6–8 minutes total and can be skipped if you're after the true three-ingredient version, but it adds real flavor the gravy alone can't.
Assembly (Active time: 10 min)
3
Build the base: Scatter the sliced mushrooms and onion over the bottom of the slow cooker. Nestle the seared (or raw) pork chops on top in a single layer.
4
Mix the gravy: In a bowl, whisk together the cream of mushroom soup, chicken broth, and ranch seasoning mix until smooth. Pour evenly over the chops.
Cooking (Hands-off: 6–7 hours on LOW, or 3–4 hours on HIGH)
5
Slow cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours. Pork chops are safe to eat once they hit 145°F (63°C) in the thickest part, followed by a 3-minute rest — that's the whole-cut minimum, not the 160°F rule used for ground pork. Most cooks take these further, to about 195–200°F (90–93°C), where the connective tissue breaks down and the meat shreds at the touch of a fork. Check a thin chop at the 4-hour mark on LOW so it doesn't overcook into mush.
Finishing (Active time: 10 min)
6
Thicken the gravy (optional): Lift the chops out onto a plate. Whisk the cornstarch and cold water into a slurry, stir it into the slow cooker, and cook uncovered on HIGH for 10–15 minutes, stirring once or twice, until the gravy coats a spoon.
7
Finish and serve: Return the chops to the slow cooker to coat in gravy, or spoon the gravy over them on the plate. Scatter with parsley or chives and serve hot.
Food Safety & Storage
- Minimum safe internal temperature: 145°F (63°C) for 3 minutes for whole-muscle pork chops — this is not ground pork, so the ground-meat 160°F rule doesn't apply here. The long braise will carry most chops well past that minimum into fall-apart territory, which is also safe.
- Storage: Refrigerate in an airtight container for up to 4 days.
- Freezing: Freezes well for up to 3 months. The gravy may look slightly separated after thawing; a quick stir while reheating brings it back together.
- Reheating: Reheat covered in a 325°F (165°C) oven or in the microwave until the chops and gravy reach 165°F (74°C) throughout.
Serving Suggestions
- Classic pairing: mashed potatoes, with extra gravy spooned over the top.
- Egg noodles or steamed rice both work as a base and soak up the gravy just as well.
- A green vegetable on the side — green beans or steamed broccoli — balances the richness.
- Crusty bread for mopping up whatever gravy is left in the bowl.
Scaling Notes
Half recipe (½×): Use 2 chops and halve the soup, broth, and ranch mix, but keep the cook time the same — a smaller slow cooker fills less liquid depth, so it won't cook meaningfully faster.
Double recipe (2×): Works in an 8-quart or larger slow cooker, arranged in a single layer if possible; stacked chops near the bottom may take 30–45 minutes longer to reach temperature. Keep the gravy ratio the same per chop rather than doubling the broth, or it'll turn thin.
Chef's Notes
- Sourcing: Any brand of dry ranch seasoning packet works; Hidden Valley is the one most of the source videos use. Buy mushrooms pre-sliced if you want to cut prep to almost nothing.
- Make-ahead: Slice the mushrooms and onion and mix the gravy the night before; refrigerate separately and assemble in the slow cooker in the morning.
- Variations: For the true viral three-ingredient version (no soup, no broth), toss the chops with the ranch packet and top with cubed butter, then cook the same way — you'll get a looser, buttery pan sauce instead of a thick gravy. @yourbarefootneighbor's Crocktober take swaps in Dijon mustard and potatoes cooked right alongside the chops.
- Common pitfalls: Thin-cut chops (under ¾ inch) can go stringy if left the full 6–7 hours — check them earlier. Don't skip the mushrooms and onion at the bottom; they keep the chops from sitting directly on the hot crock floor and scorching the gravy underneath.
- On sodium: Condensed soup plus a seasoning packet is a salty combination by design. Counting roughly 540 mg from the soup, 525 mg from the ranch packet, and 35 mg from the broth, each serving lands around 1,100 mg of sodium — close to half a day's recommended intake, before you add salted mashed potatoes on the side. That's genuinely high, not a rounding error. If you're watching sodium, use low-sodium broth and a reduced-sodium soup, skip added salt entirely in step 1, and go easy on the ranch packet — even three-quarters of the packet still delivers the flavor.

Why This Went Viral
Every fall, a chunk of TikTok's cooking accounts turns into a slow-cooker relay called "Crocktober." Passionate Penny Pincher runs an organized version of the challenge, cooking in a crockpot on weekdays from September 28 through October 30, 2026, and posting the lineup as she goes. Individual creators run their own versions under #crocktober and #crockpotrecipes. Ranch pork chops show up every year, in two flavors: @eatingonadime's three-ingredient version (chops, a stick of butter, a ranch packet) for anyone who wants the floor of effort, and richer takes like @amy.darley's, which add a can of cream of mushroom soup to build an actual gravy. The hook is the gap between effort and payoff — a handful of pantry staples turn into something that looks and tastes like it took real work, and the gravy is what makes it photograph like dinner instead of a pile of beige chicken.
